Benjamin Lephilibert worked for Accor Hotel Group and was responsible for the implementation of the environmental certification program Green Globe & EarthCheck in 44 Novotel properties throughout 9 countries in Asia.
In twenty minutes, Benjamin will explain to us everything one needs to know about hotel sustainability, with an emphasis on the ubiquitous sustainability labels: their pros and cons for hotels and why it shouldn’t be a priority for small properties. As money is often an issue, he will also talk about the financial gains to be expected when a hotel starts implementing sustainability measures.
But the highlight of this interview is the fantastic “food waste 101” Benjamin gave us: this oft-overlooked topic is nevertheless extremely important to monitor and handle, as it can represent huge amount of money going to the bin each week. As he explained, for a hotel serving 20 000 covers a month, you can save 50 000 to 85 000 $ a year worth of food and other ingredient. As very little data is available on this topic, and given Benjamin’s extensive experience, it is a great opportunity for learning all you can on how to implement these practices.
